Veggie omelette

  • 2-3 eggs (beaten)
  • ¼ cup roasted pumpkin cubes
  • 3 cherry tomatoes halved
  • 6 baby spinach leaves
  • 1 tbsp crumbled feta cheese
  • Salt & pepper to taste


  1. Warm pan over medium heat.Pour in beaten eggs and using a silicone spatula stir egg mixture gently until the mixture starts to set.
  2. Leave to cook until omelette is fully set then add fillings. Turn off heat and allow residual heat in pan to finish cooking.
  3. Season to taste and serve.
