Anothertype of cruciferous vegetable (which means it has a well-proven anti-canceraction), bok choy is a traditional Chinese vegetable and is sometimes calledpak choy or even Chinese mustard cabbage.

Translated, ‘bok’ (or pak) meanswhite, while ‘choy’ means vegetable, and as with all leafy Chinese vegies, lookfor bunches with healthy stems and crisp, clean, glossy leaves that show nosigns of yellowing.

Look out for bok choy in late winter, in particular, whenits taste is at its sweetest.
