Banana bread

Cook time: 45 minutes

Serves: 4


  • 125 g butter
  • ½ cup brown sugar
  • ½ cup white sugar
  • 3 eggs
  • 2 to 3 bananas, mashed
  • 1 tablespoon Blue Hills Leatherwood and Pepper Berry honey
  • 1 teaspoon vanilla
  • 1 ½ cups plain 4 Roses flour
  • ½ teaspoon cinnamon
  • ½ teaspoon all spice
  • 1 teaspoon baking powder
  • 1 teaspoon bi-carb soda
  • 1 extra banana


Step 1

Heat oven to 170 degrees Celsius

Step 2

Using an electric beater, beat the butter and sugar until smooth and light

Add the eggs and beat until mixed

Remove the bowl from the mixer

Step 3

Fold the bananas, vanilla and honey into the butter, sugar and egg mixture

Add the flour, baking powder, bi-carb, cinnamon, all spice and mix together

Step 4

Spoon the mixture into a loaf tin lined with baking paper

Chop the extra banana into rounds and place evenly over the top of the mixture

Sprinkle with raw sugar

Bake for 45 minutes or until golden and cooked in the middle

Cool a little, then slice and serve with butter
