Chocky rocks

Serves: 2

Ingredients

  • 125 g softened butter
  • 100 g white sugar
  • 100 g brown sugar
  • 1 egg
  • 1 teaspoon baking powder
  • 75 g chopped dates
  • 75 g chocolate chips
  • 1 ½ cups 4 Roses plain flour

Method

Step 1

Heat oven to 180 degrees Celsius

Step 2

Beat the butter and sugars until light and creamy

Add the egg and beat to mix through

Mix in the baking powder  

Step 3

Add the dates, chocolate chips and flour and mix together to a firm biscuit consistency.  Add more flour if needed

Step 4

Spoon a tablespoon of dough into your hand and form into a ball

Roll the dough ball in cornflakes and place onto a tray lined with baking paper

Press down gently

Bake until golden
