Avo on toast sunny side up

Ingredients:

  • 1 ripe avocado 
  • ½ lime 
  • 20g crumbled feta cheese 
  • 1tsp Dukkah 
  • Mixed tomatoes 
  • 1 slice sourdough 
  • 1 egg 

Method:

  1. Crush the avocado until, chunky consistency, add the lime, feta, and dukkah. 
  2. Season well. Pan fry the egg, meanwhile toast your sourdough. 
  3.  Assemble the toast, layering the avocado, tomato and the egg. Season with salt and pepper.
