Green Stir Fry

This light vegetarian stir fry is perfect for lunch or dinner. You could add strips of chicken or beef to the pan at the beginning of cooking for a non-vegetarian option.

Ingredients:

  • 2 zucchini
  • 1 onion – peeled
  • Small piece of root ginger
  • 1 clove garlic, peeled
  • 2 large handfuls green beans
  • 2 tsp sesame oil
  • 2 tsp vegetable oil
  • Soy sauce – to taste
  • Large handful fresh herbs e.g. parsley or mint, chopped
  • A few handfuls of unsalted cashew nuts
  • Cooked egg noodles or rice to serve

Method:

  1. Cut the zucchini into thin sticks. Cut the onion in half and finely slice. Peel and grate the ginger and finely chop the garlic. Trim the beans and cut in half.
  2. Heat the oils in a heavy based frying pan or wok, add the onion and fry for a few minutes.
  3. Add the ginger, garlic, zucchini and green beans and fry for another few minutes.
  4. Add the soy sauce and continue to stir fry, tossing everything together.
  5. Add the herbs and cashew nuts and toss everything together. Serve with rice or noodles.
